
Happy Friday my loves, it has been a while since I have done some baking. In fact, I am not going to lie, as much as I would like too, I have not baked in more than a few months. Hopefully this will change. This urge to bake has reminded me of a recipe that I tried last year. I have posted it before but I thought of a few variations I thought I would share with you.
I came across this from an Instagram account I follow and although it sounds like a weird combination it is quite tasty and takes less than an hour with minimal mess too. A total win-win when it comes to baking!
The basic recipe is:
- A can of chickpeas
- 1-2 tablespoons of peanut butter (I personally feel this can be adapted depending on taste)
- A spoonful of maple syrup or honey (again adapt to personal preference)
Other filling options
- A bagful of chocolate chips
- A bag of dried fruits
- A handful of cranberries and dried cherries
- Orange Zest
Method
Step 1 - Drain Chickpeas then blend in food processor
Step 2 - Add peanut butter and in to processor
Step 3 - Take out the mixture and add in any extras you may want too.
Step 4 - flatten out and make a cookie style shape to place on baking tray.
Step 5 - Place in oven for 20 - 25 minutes
Step 6 - Voila - Sit back and enjoy.
